This Is For Operators Who Are Done Settling

44 years of independent restaurant operations distilled into thinking you can actually use.

Every post goes straight to your inbox — no algorithm, no noise, no waiting. Just field notes from someone who has been on the stage, run the numbers, and built the systems. Written for operators who are done settling for good enough.

No pitch. No filler. Just the work.

How I Make This

Every piece published here is written in collaboration with an AI system. Here’s what that actually means.

The ideas, frameworks, arguments, and IP are mine. Forty-four years on restaurant floors. Thirty-four openings. Five volumes of The Operator’s Playbook. The Two Roads model, the Five Fundamentals, the Discipline Architecture — the entire IP catalogue this work rests on was built and locked before AI touched a sentence.

I use AI to do three things:

  1. Research. Fast pulls on sources, industry data, and reference material I need to test an argument against.

  2. Argue against me. I use AI to push back on my thinking, run devil’s advocate, find the holes in my logic, and refine the frame. The pushback is where the thinking sharpens.

  3. Clean up mechanics. Typos, punctuation, and the small editing work that doesn’t need my time.

If a piece reads like it came from me, it’s because it did.
